Do you need something sweet to go with your coffee or tea - but only something small? Try one of our great Matcha recipes and spoil your loved ones with the French specialty Matcha Macaron!
The preparation does not take much time, so first preheat the oven to 150 ° C in top and bottom heat and cover your baking sheet with baking paper. Now beat the four egg whites and the lemon juice to a stiff snow and slowly add the sugar. When the egg whites are firm and shiny, carefully fold in the ground almonds mixed with the matcha for baking. Pour the mixture into a piping bag with a large round nozzle. If you are not very successful at filling the bag, put it in a mug and it won't spill too much.
Now you inject small balls with a diameter of about 2 cm onto the sheet. Let the nascent macaroons rest on the baking sheet for about 20 minutes so that a small crust can form on the surface. Control the heat in the oven and the macaroons can be put in. Bake time about 35 minutes. Leave the oven door ajar, because it is more a question of "drying" than actually "baking".
You can prepare the filling during the resting and baking time. To do this, beat the butter and powdered sugar until frothy and then stir in small amounts of the cream cheese and the ground pistachios. When the macaroons have cooled down (they don't get that hot), use the piping bag with a small star nozzle to squirt the cream onto the flat side of a macaroon and cover with a suitable half. Gently press down gently.
Matcha recipes are a real eye-catcher due to the unusually green color of the pastry. If you have succeeded with the macarons, you can put them in a bowl or on a plate and decorate with powdered sugar or some matcha powder. Serve with a matching Matcha tea!
