Matcha crepes with strawberries and whipped cream

Doesn't this creation look amazing! Wafer-thin crepes with intensive coloring thanks to matcha powder and as a contrast the bright red strawberries, embedded in delicious whipped cream. Since the crepes have a slightly stronger taste due to the addition of Matcha powder, the cream can also be sweetened a little more. You decide how intense the color and taste of the crepes should be at the end. Just try whether you might want to add some sugar to the dough as well.

Ingredients for the Matcha Crepes:

  • 500 ml of milk
  • 250 g flour
  • 1 tablespoon vanilla sugar
  • a pinch of salt
  • 2 to 3 teaspoons matcha (optional)
  • 4 eggs
  • 50 g butter
  • 1 tablespoon of cognac

How to prepare your matcha crepes:

The preparation is very easy. You mix milk, flour, vanilla sugar, matcha powder and salt with the eggs and then add the cognac and melted butter. Mix well again and the batter for your Matcha Crepes is ready. 

With coated pans you don't need any fat for baking, otherwise only use very little fat and put just enough batter into the pan to cover the bottom. Cook over medium-high heat for about two to three minutes per side.

You can then fill the matcha crepes directly with cream and finely chopped strawberries and serve immediately.

These Matcha Crepes can of course also be made with other fruits. Blueberries and/or raspberries should go very well with it in terms of taste and colour.

This recipe can easily be modified into a savory version by omitting the sugar when making the dough. Instead of the cream you can use cream cheese and top the Matcha crepes with ham or strips of salmon. As you can see, this is a very versatile recipe that you can vary a lot yourself.

These delicious crepes are quick to prepare and you always have the ingredients at home. That's why you can spoil your loved ones with it at any time of the day. As a surprise for breakfast, a quick lunch or freshly prepared with coffee.
