Delicious Matcha biscuits to bake yourself

Christmas is actually the time for cookies, but why not bake some delicious cookies at other times of the year. The nice thing about it is that you can make it as a supply. So if you feel like baking something delicious again, even if there is no reason for a cake, then just try the matcha cookies!

The preparation is very simple, you make a shortcrust dough from the following ingredients:

75 g sugar
1 sachet of vanilla sugar
150 g butter
50g grounded almonds
270 g flour
3 teaspoons of matcha powder, e.g. Matcha X or Matcha Zen

Prepare the mixture of sugar and matcha in a small bowl, making sure that the matcha powder is well mixed with the sugar and that there are no lumps.

In a large bowl, mix the flour, almonds, sugar, and matcha. Then add the butter cut into pieces and knead everything into a smooth dough. Take your time, you can also snack and, if necessary, add seasoning - you have to know whether the whole thing tastes good! The consistency of the dough should be such that it can be easily shaped into a ball.

For our recipe we don't want to cut out cookies, but rather cut small slices. To do this, cut the dough in half and form two rolls from it. Wrap them in foil and put them in the fridge for 1 to 2 hours, and if you want to go quickly, put them in the freezer for a few minutes. The dough should be cut-proof for the next step.

Grease a baking sheet or line it with baking paper and cover with approx. 1 cm thick slices of our rolling pin. Baking time at medium heat (approx. 175 ° C) 12 to 13 minutes. Shortcrust biscuits should be baked lightly, so be careful not to turn them brown. In our case, the green Matcha color should be created.

After baking, roll the cookies with the edges in coarse sugar, it can also be cane sugar. Of course, you can also let the cookies cool down completely and then decorate them with white or brown icing.

Your cookies will stay in a cookie jar until your next surprise visit at the latest!
