Matcha cheesecake
In this Matcha cake recipe we will show you how to prepare a delicious Matcha Cheesecake, because Matcha is not only suitable for drinking, but also wonderful for baking!
Ingredients:
Cheesecake mass
Cream cheese (700g)
Plain yogurt (120g)
4 large eggs
Sugar (300g)
Salt (1 pinch)
Powdered sugar (1 tablespoon)
Vanilla extract (1 teaspoon)
Matcha powder (2 tablespoons of matcha - we recommend Matcha Zen)
Cheesecake bottom
15 chocolate chip cookies
Sugar (2 tablespoons)
Salt (1 pinch)
Butter (4 tablespoons)
Preparation:
- Preheat the oven to 175 ° C
- First, the chocolate biscuits are crushed into small biscuit crumbs. This works best if you put it in a freezer bag and work it with a rolling pin.
- The biscuit crumbs are then mixed together with sugar, salt and melted butter in a small bowl and then placed in a springform pan (approx. 26cm diameter). The whole thing is then pressed onto the base by hand until a uniform cake base is created. Then bake the cake base in the oven for 10 minutes and let it cool down.
- While the cake base is in the oven, the matcha powder and 2 tablespoons of yoghurt can be stirred together with a hand mixer.
- Next, stir the cream cheese in a large bowl for about 2 minutes and mix it with the matcha yoghurt mixture prepared in step 4 and the remaining yoghurt to form a creamy mixture. The eggs, vanilla extract and a pinch of salt are added to this mixture while mixing.
- The matcha cream cheese mass is now placed on the cake base in the springform pan and baked in the oven for approx. 45 minutes until the cake is firm. In the middle, however, the cake can be a little softer.
- Finally, let the matcha cake cool in the refrigerator for an hour and let it set. The matcha cheesecake is ready!
If you like, the cheesecake can be sprinkled with powdered sugar or otherwise decorated.
