  • 4 beaten egg yolk
  • 500 g wheat flour
  • 1 P. baking powder
  • 1 tablespoon matcha powder (Recommendation: Matcha Zen or Matcha Gourmet)
  • a pinch of salt
  • 250 ml of milk
  • Grated zest of a lemon from the health food store or lemon flavor

For the shape:

some butter or margarine to spread and breadcrumbs or semolina to sprinkle so that the cake doesn't stick in the pan.

For the cast:

Juice of a lemon
Icing sugar or 1 packet of lemon cake glaze

Preparation of your Matcha sponge cake with lemon icing:

For the dough, first stir the sugar, butter and lemon peel until frothy, then add the egg yolks one by one and mix everything together. The flour is mixed with the baking powder, the salt and the matcha powder and carefully mixed with the milk and the egg mixture. Pour the finished dough into the greased and scattered cup cake pan and smooth it out. When adding the matcha powder, it is best to try how intense you want the color and aroma to be.

Put the form in the preheated oven and bake at 180 ° C for 50 minutes. When the cake is ready, simply let it cool down in the pan on a wire rack.

The cooled cake is then thrown onto a cake plate and coated with the cake topping. You make the icing from the juice of the lemon, which you slowly drip into a bowl with powdered sugar. Please be careful not to add too much juice to the powdered sugar so that the icing doesn't get too thin.

Instead of grated lemon peel you can of course also use lemon flavor, you can also buy the lemon icing yourself. The lemon from the health food store, on the other hand, is natural and has no flavor!
